<p><strong>1. GRILLING</strong></p>
<p style="text-align: left;">When grilling chicken, it would be best to spatchcock it first. It will allow your chicken to cook evenly. Spatchcock is a method of preparing your chicken that allows it to flatten out before you cook it. To spatchcock a chicken, you&#8217;ll need to cut the skin from neck to tail end of the backbone to be able remove it. Cut the skin on top while the chicken is breast-side down. After removing the backbone, make a small slit in the cartilage towards the end of the breast bones to reveal the keel bone. Crack open the chicken to release the keel bone and pull it up with the attached cartilage. Smooth the skin and you&#8217;re done spatchcocking your chicken and you&#8217;re ready to grill. When grilling, make sure to use tongs or spatula. Don&#8217;t use fork to flip your chicken to avoid losing the juices of your chicken. If you use the indirect grilling method by placing your chicken on a pan, you can use a loose foil tent to cover it loosely. This will help retain heat and moisture for better cooking.</p>

<p>When you choose to brine your chicken, a good tip would be to add some room-temperature butter under the skin just before you cook it. It will keep your chicken moist and result to a crispy skin full of flavor. Brining your chicken before you roast it will result to a tender, juicy meat. <p>This chicken recipe is Asian-inspired. Let&#8217;s use a wok to cook chicken on the stove. To start, fill up the wok with healthy oil, about one thirds full. We will use this to deep fry the chicken. Now let&#8217;s move on to the main ingredients. Prepare the following before you start heating up the oil in the wok.</p>

<li>4 chicken breasts</li>
<li>1 egg, beaten</li>
<li>cornstarch or rice flour for coating</li>
<li>Juice and zest of 1 lemon</li>
<li>1 tablespoon rice or white vinegar</li>
<li>60 grams of palm or other sugar</li>
<li>60 ml water</li>
<li>1 ½ tablespoon cornstarch</li>
<li>4 scallions or spring onions, sliced diagonally</li>
<li>Salt and pepper to taste</li>
</ol>
<p>Now, prepare the chicken breasts by seasoning them with salt and pepper. Dip the seasoned chicken in the egg. Next, coat your chicken by rolling on a plate with flour. By this time, you should heat up your oil to a smoking point. Once it reaches its smoking point, add in the chicken with the use of a slotted spoon or tongs.</p>
<p>It only takes about eight minutes for chicken to cook but it will also depend on the size of your chicken breasts. As you let your chicken cook, prepare a small saucepan. Add in the lemon juice, sugar, water, and vinegar. Bring it to a boil as you continue to stir. Once it boils, reduce the heat and let it simmer for a couple of minutes more.</p>
<p>When chicken is done, let it drain on a large plate laid with paper towel. As you let it cool a bit, finish your lemon sauce by combining starch with the 60 ml water. Add the starch mixture to the sauce as you continue stirring. Bring to a boil then remove from heat.</p>
<p>Now, slice your chicken breasts diagonally and then spoon the sauce on top. Garnish with spring onions and you are ready to serve your lemon chicken! Enjoy!</p>
