If you are thinking of a dish that your guests would definitely love, try to prepare this prime rib roast. To estimate the number of ribs to buy, you can allot 1 rib for 2 people. Of course, this depends on how big the prime rib is and how big or small eaters your guests are. Enjoy!
Ingredients:
2 tbsp. butter at room temperature
Prime rib at room temperature
Procedure:

The most important consideration before starting to cook the prime rib is that the meat should be at room temperature to be able to cook it evenly. Thaw the prime rib then let it stand for approximately 2 hours uncovered at room temperature. If you ignore this step and start cooking the roast cold, you will end up cooking it longer than usual, plus having well-done parts at the end and raw meat at the center.

Take out excess fat, meaning fats more than 1 inch. Disregard the thin layers of fat since these add flavor to the prime rib.

Preheat the oven at 450 degrees F.

Spread the butter at the ends of the prime rib.

Get a metal or stainless steel pan that is at least 3 inches deep. Place the meat inside it, either the fat side up or the ribs down.

Now, start to cook the prime rib for about 15 minutes at 450 degrees F. After which, lower the temperature to 325 degrees F until it is cooked. Cooking time depends on the weight of the prime rib. Approximately, the cooking time are as follows: for 2 ribs with 4 – 5 lbs: 60 – 70 minutes; for 3 ribs with 7 – 8.5 lbs: 1.5 – 1.75 hours; for 4 ribs with 9 – 10.5 lbs: 1.75 – 2.25 hours; for 5 ribs with 11 – 13.5 lbs: 2.25 – 2.75 hours; for 6 ribs with 14 – 16 lbs: 3 – 3.25 hours; for 7 ribs with 16 – 18.5 lbs: 3.25 – 4 hours.

Baste the ends of the meat with the fat build-up in the pan every 30 minutes.

Start to check the internal temperature of the roast 30 minutes before the estimated cooking time. The tip of the thermometer should be in the thickest part of the meat and not touching the fat or the bone. Use a digital meat thermometer since this is the best way to check if the meat is ready. Do not rely mainly on estimated cooking time. If the temperature reaches 120 degrees F, you can remove the rib from the oven and use an aluminum foil to cover it.

Let the prime rib sit covered for about 15-20 minutes. Take note that the meat’s temperature will continue to rise as it sets. If you set it aside longer, the higher the temperature will be. Be guided on the how you want the prime rib to be cooked. If you want the meat to be rare, internal temperature is about 120 to 125 degrees F. For medium rare, it is about 130 to 135 degrees F. Medium and medium well is approximately 140 to 145 degrees F and 150 to 155 degrees F, respectively. And if you want your meat well done, the temperature should be about 160 degrees F and above.
