Ingredients needed
- 2 to 3 large egg plants
- 1 tea spoon of salt and some pepper to taste (freshly ground if available)
- 1/4 a cup of flour (flour can also be seasoned with salt, pepper or other preferred spices)
- 1 egg
- 2-3 tablespoons of water
- 1/4 a cup of fine dry and seasoned bread crumbs (can be seasoned with salt, pepper or any other preferred spices)
- Enough cooking oil for deep frying
Procedure of how to deep fry the Egg Plant
- Peel the egg plant
- Cut it into sticks of ¼ inch thickness.
- Sprinkle salt and freshly ground pepper on it.
- Roll egg plant in flour then dip it into the egg beaten with water.
- Roll in the seasoned bread crumbs then fry it in hot oil about 380° for 2 minutes or until the egg plant turns a rich golden brown color.
- Transfer to paper towels to drain.
- Serve immediately with a dip, if desired.
