  4. 1/4 cup fresh lemon juice

  5. 1 heaping teaspoon crushed fresh garlic

  6. 1/2 teaspoon dried mint

  7. 1/4 cup olive oil

  8. Fresh black pepper

  9. 1/2 cup chopped scallions, include green part

  10. 2 medium tomatoes, diced

  11. 1 cup fresh chopped parsley

  12. 1 chopped cucumber or summer squash

  13. Optional:

  14. 1/2 cup cooked chick peas

  15. ½ cup coarsely grated carrot

  16. 1 chopped green pepper

I recommend Bulgar Wheat it’s wonderful. It’s so easy to cook. It’s like Cous Cous but healthier. Remember to cook you use 2 parts boiling hot water for every 1 part Bulgar. Let it stand and after 30 minutes it is ready. Very simple.

YUMMY!! I made a couple of changes. I did not use olives, but i did use radishes. Very filling.
